Ingredients  For Sugar Syrup

  • Granulated sugar 2.5 cup
  • Water 250 ml
  • Ilaichi powder 1/2 teaspoon

Ingredients  For Balushahi:

  • All purpose flour -1 cup
  • Ghee 1/4 cup
  • Water 1/4 cup
  • Yogurt 1 teaspoon
  • Baking powder 1 teaspoon


  1. In a large wide pan add granulated sugar.
  2. Add water.
  3. Bring it to boil with constant stirring .
  4. Now add ilaichi powder let it boil for few seconds.
  5. Transfer the sugar syrup in to a bowl and set aside.
  6. In a large wide bowl add ghee.
  7. Add water.
  8. Add all purpose flour.
  9. Add yogurt.
  10. Add baking powder.
  11. Mix all the ingredients.
  12. Knead the dough and keep aside for 5 minutes.
  13. Cut the dough in to 4 equal parts.
  14. Now make three small peda’s with  each part .
  15. Take one peda in middle of your palm.
  16. With the other hand start rolling in between your palms until you get nice shape.
  17. Make the hole in the center and set aside.
  18. Make all the balushahi with same technique.
  19. Heat the ghee on low flame.
  20. Put small part of dough if it come up quickly that means the ghee is ready to fry.
  21. Add balushahi for frying.
  22. Let them fry on low heat until they come up.
  23. Keep frying on low heat until golden brown and flip them.
  24. Fry on the other side till golden brown and take them out.
  25. Put them in sugar syrup for 4 minutes on one side and flip them and leave them in syrup for 4 more minutes.
  26. Garnish them with sliced pistachios and kesar and enjoy.
