Healthy Lunch Box Idea

It’s tough to make healthy food and  tasty. At the same time, you need to make sure that they’re getting adequate nutrition . Therefore, packing the perfect lunch box for your child/for your hubby is probably one of the most challenging tasks. It’s easy to run out of ideas when it comes to healthy lunch box.

In most cases, breakfast is usually a hurried affair and often lost in the hustle bustle of the morning madness. To make sure your actually eat well it is important to put in that extra thought while packing lunch box, which is full of nutrition. Brown Rice Pulao:

Ingredients:

  • Brown Rice 2 cups
  • Onion (thinly sliced) 1 cup
  • Tomato (finely chopped) 1 cup
  • Potato (peeled and cut into pieces) 1/2 cup
  • Green peas 1/2 cup
  • Carrots 1/2 cup
  • Broccoli/cauliflower Few florets
  • Ginger garlic paste 2 teaspoon
  • Garam masala powder 1 teaspoon
  • Coriander leaves 1 cup
  • Green chili 4 to 6
  • Mint leaves 1 cup
  • Yogurt 2 table spoon
  • Lemon juice 1 teaspoon
  • Turmeric powder 1/2 teaspoon
  • Kasuri methi 1 teaspoon
  • Salt to taste
  • Olive oil 4 tablespoon

Procedure:

    1. Soak the brown rice for 1 to 2 hours ,drain and set aside.
    2. Make fine paste by adding ginger garlic paste,coriander leaves,green chilies and set aside.
    3. Add oil in a heated pan, then add sliced onions and fry till golden brown.
    4. Now add mint leaves saute and add ginger garlic coriander and green chili paste, saute for few minutes.
    5. Add garam masala powder,turmeric powder,red chili powder, kasuri methi and salt to taste mix well.
    6. Add yogurt and lemon juice give it a mix and add all vegetables and mix well, and cook covered for 5 minutes.
    7. Then add 2 cups of water and bring to boil.
    8. Now add soaked brown rice allow to cook until done.
    9. Serve hot with raita and papad.

Vegetable cheese Sandwich:

Ingredients:

  • Brown Bread slices 2 to 4
  • Butter 1 teaspoon
  • Mint leaves 1 cup
  • Coriander leaves 1 cup
  • Green chili 3 to 4
  • Onion (finely chopped) 1/2 cup
  • Lemon juice.
  • Potato (boiled and peeled) 1 medium size
  • Carrot (grated) 1 cup
  • Cucumber (grated) 1 cup
  • Salt to taste
  • Pepper powder 1 teaspoon

Instruction:

1-Make green chutney by adding mint, coriander leaves,green chilies,chopped onion,lemon and salt to grinder and grind to fine paste set aside.

2-In a large bowl mix boiled and chopped potato, grated carrot and cucumber add salt peppers mix well and set aside.

3- Cut the wheat bread edges and apply butter.

3-Now take wheat beard cut the edges of bread and apply butter.

4-Apply vegetable mix .

5-Grill on grilling pan until golden brown.

6-Flip and grill on the other hand side.

7-Cut into desired shape and serve hot.

Grilled Vegetables:

Ingredient:

  • Green capsicum (chopped) 1/2 cup
  • Red capsicum (chopped) 1/2 cup
  • Yellow Capsicum (chopped) 1/2 cup
  • Green peas 1/2 cup
  • Carrot (chopped) 1/2 cup
  • Salt to taste
  • Black pepper powder
  • Olive oil 2 teaspoon

Instruction:

  1. In a large mixing bowl add all the vegetables , salt, black pepper powder, and olive oil and set aside for 15 to 20 minutes.
  2. Grilled them on grilling pan until golden brown.
  3. Serve hot.
