Chicken Fried Rice ,Chicken Salad And Chicken Vegetable Tikka

          

 Another healthy lunch idea, with chicken fried rice, chicken salad, and chicken vegetable tikka with step by step picture and instructions. For vegetarian food lovers you can replace chicken with paneer and follow the rest of recipe.

Chicken Fried Brown Rice:

Ingredients For Marination:

    • Boneless chicken ( medium size pieces) 4
    • Hung yogurt 2 tablespoon
    • Red chili powder 1 teaspoon
    • Garam masala powder 1 teaspoon
    • Oil 2 tablespoon
    • Turmeric powder 1/2 teaspoon
    • Salt to taste

Ingredients For Fried Rice:

  • Cooked  plain brown rice/left over 2 cups
  • Onion (thinly sliced) 1/2 cup
  • Green capsicum (thinly sliced) 1/2 cup
  • Red capsicum (thinly sliced) 1/2 cup
  • Yellow capsicum (thinly sliced) 1/2 cup
  • Carrot (thinly sliced) 1/2 cup
  • Green peas 1/2 cup
  • Soya sauce 1 teaspoon
  • Vinegar 1 teaspoon
  • Olive oil 2 tablespoon
  • salt to taste.

Procedure:

       

1-Marinate the chicken pieces by adding all the ingredients and refrigerate it over night.

2-Shallow fry chicken till golden brown and set aside, to cool down, once cooled down sliced into pieces and set aside.

2-Add oil in heated pan.

2-Then add sliced onion and saute for few seconds.

3-Add all the vegetables and saute for few minutes.

4-Add fried chicken slices give it a mix.

       

5-Add soya sauce , and vinegar toss all the mixture.

          

6-Add brown rice mix well and saute on high flame for few minutes.

7-Garnish with Spring onion.

8-Serve hot and enjoy!.

Chicken salad:

Ingredients For marination:

  • Boneless chicken 5 to 6 pieces
  • Hung yogurt 2 tablespoon
  • Red chili powder 1 teaspoon
  • Garam masala powder 1 tespoon
  • Oil 2 tablespoon
  • Turmeric powder 1/2 teaspoon
  • Salt to taste

Ingredients For Salad:

  • Lettuce (finely chopped) 2 cups
  • Pepper powder 1 teaspoon
  • Grilled chicken
  • Vegetables (red,yellow,green capsicum,and carrot) chopped 1 cup
  • Salt to taste
  • Olive oil 1 teaspoon
  • Salt a pinch

Procedure:

        

2-Shallow fry chicken till golden brown and set aside, to cool down, once cooled down sliced into pieces and set aside.

Seasoned all vegetables by adding salt and pepper,olive oil and set aside for 10 minutes, then roast them until they are smoky and set aside.

4- In large mixing bowl add chopped lettuce and just a pinch of salt and pinch of pepper mix well.

6-Add olive oil.

7-Add onion vinegarette .

8-Add grilled chicken .

9-Add grilled vegetables.

8-Mix well and salad is ready.
9-Enjoy!!

Chicken And Vegetable Tikka:

Ingredients:

    • Boneless chicken pieces(medium size) 6 to 8
    • Red capsicum (Diced ) 1/2 cup
    • Yellow capsicum (Diced ) 1/2 cup
    • Green capsicum (Diced ) 1/2 cup
    • Hung yogurt 2 tablespoon
    • Red chili powder 1 teaspoon
    • Garam masala powder 1 teaspoon
    • Oil 2 tablespoon
    • Turmeric powder 1/2 teaspoon
    • Salt to taste

Procedure:

1-Marinate the chicken and all vegetables together by adding all the ingredients and refrigerate over night.

2-Grill them until they golden brown and smoky.

3-Serve hot and enjoy!
