The best chocolate cake sponge recipe| Tried & tested chocolate cake recipe

This is a really easy yet exceptional Chocolate Cake that truly tastes of chocolate. The crumb is beautifully tender and moist, and it keeps for up to 5 days. The tried and tested recipe that never goes wrong.

Ingredients-

  • All purpose flour 245gm
  • Powdered sugar 400gm
  • Unsweetened cocoa powder 75gm
  • Baking powder 1 1/2 tpn
  • Baking soda 1tpn
  • Salt 1/2tpn
  • 5 eggs separate egg yolk and egg whites
  • Unflavored cooking oil 100ml
  • Instant coffee mixed with warm water 1/2 cup Milk as required to adjust the consistency of cake batter
  • Baking pan of your choice

Process-

  1. In a large mixing bowl add all the dry ingredients and mix well.
  2. Make a well in the middle add egg yolks, oil, instant coffee mix and milk.
  3. with the help of electric mixer mix the batter well and set aside.
  4. In another pan add egg whites some vanilla essence and beat on high speed till soft peaks.
  5. Fold in the egg white mixture in to the cake batter by cut and fold method.
  6. Line the baking pan with butter paper and pour the desired amount of cake batter.
  7. Tap the pan 2-3 times to remove air bubbles.
  8. Bake the cake for 25-30 minutes at 350F/180C.
  9. After convenient time check the cake with tooth pick it should come out clean.
  10. Cake is done.
  11. Take out from oven , let it cool down then take out from pan.
  12. Cover the cake with plastic foil and set aside for 2-4 hours for cooling down .
  13. then decorate the cake with icing .
