Restaurant Style Chicken Kadhai | चिकन कढ़ाई | famous Kadhai Chicken recipe | Easy Kadhai Chicken.

Kadai chicken is a simple, spicy dish and is traditionally made in a cast iron wok , but you can use a dutch oven or large saute pan instead. Kadai (or Karahi) just means “wok” – therefore, Kadai Chicken translates to Wok Chicken.

  • Cooking time 20-25 minutes
  • Serve 2-4

Ingredients-

  • ¼ cup Oil, तेल
  • 2 tbsp Sugar, चीनी
  • 900 grams Chicken (thigh & drumstick) चिकन
  • Salt to taste, नमक स्वादअनुसार
  • 4-5 large Tomatoes, cut into half, टमाटर
  • 2-3 no. Green chillies (less spicy & roughly chopped) हरी मिर्च

For Kadhai Masala

  • 1 tbsp Black peppercorns, काली मिर्च के दाने
  • ½ tsp Cumin seeds, जीरा
  • 1 tsp Coriander seeds, धनिये के बीज
  • 1 no. Black cardamom, बड़ी इलायची

For Sauteed Veggies-

  • 1 ½ tbsp Oil, तेल
  • 2 tspn Ginger garlic paste
  • 1 large Onion, diced, प्याज
  • 1 large Capsicum, diced, शिमला मिर्च
  • 1 large Tomato, diced, टमाटर
  • 1 tsp Prepared Kadhai Masala, तयार किया हुआ मसाला
  • Salt to taste, नमक

For Kadhai Masala

  1. In a mortar pestle, add black peppercorns, cumin seeds, coriander seeds, black cardamom and grind it coarsely.
  2. Keep it aside for further use.

Process

  1. In a handi or kadhai, add oil, once it’s hot, add sugar, chicken, salt to taste and cook it in high flames until golden in color.
  2. Add tomatoes and saute it for a while until mushy, take out the tomato skins aside..
  3. Add green chilies and cook it for 7-8 minutes or until cooked well.
  4. Add red chili powder and salt to taste mix it well, allow it to cook for a few minutes, turn off the gas and set aside.
  5. In another pan, add oil, once it’s hot, add ginger garlic paste, onions and saute it for a minute.
  6. Add capsicum, tomato, prepared kadhai masala, salt to taste, and saute it on high flames for a while.
  7. Transfer it to the prepared kadhai chicken and mix it well.
  8. Let me cook covered for a few minutes .
  9. Serve hot with roti naan or rice.
