Introduction:
Bhendi (okra/ladies finger) is one of the most popular and nutritious vegetable .Bhendi fry is stir fried ladies’s finger (okra) that is slit and stuffed with spice mix, such as gram flour, red chili powder,turmeric powder, green chili, and salt or any and other locally available ground spices.It can be served as a side dish in accompaniment with steamed rice and dal or with chapati as a form of sabzi or as snack with tamarind chutney.
Ingredients:

Ladies finger 1 pound (washed,dried and cut length wise)

Gram flour 1 cup

Corn starch /corn flour 1/4th cup

Red chili powder 2 teaspoon

Turmeric powder 1/2 teaspoon
-
Green chili finely chopped 1 teaspoon

Warm water 1/2 cup
-
Salt to taste

Cooking oil for frying
Procedure:

Rinse the ladies finger in water and spread on paper towel to dry completely.

Slice off the cap end of ladies finger pod and discard it, Cut each ladies finger length wise in half and set aside.

In a large frying pan add cooking oil for frying and allow it to heat on medium flame.

In a large bowl add gram flour ,corn starch,red chili powder turmeric powder,green chili,salt to taste and give it a good mix.

Now add ladies finger and mix well.

Once the oil is hot ,pour warm water over the floured ladies finger and quickly stir it in with your hands.

Fry the ladies finger in hot oil until they crispy and golden brown in color.

Transfer the fried ladies finger to the paper towel to drain out excess of oil.

Serve hot as side dish with steamed rice and dal or with chapati as sabzi or as stater/ snack with tamarind chutney.
