Introduction-
Roat also known colloquially as Dum ke Roat ( दम के रोट) (دم کے روٹ) is a sweet confectionery dish from the Indian city of Hyderabad. It is made by mixing semolina, refined flour, jaggery, ghee, dry fruits, saffron and khoya, almond flour into a dough and baking it in the oven. Traditionally these cookies are made in bhatti (clay oven) but electric ovens are a good alternative. Dum Ke Roat is the traditional nizam of hyderabadi roat recipe made during the holy month of Muharram in Hyderabad and other parts of India. Recipe for Hyderabadi dum ka roat
Resting time :2 hours
Baking time :15-20 minutes
Yields:15 roats
Ingredients-
- Soji/Rava 2 cups
- Almond flour 2 cups
- Gud/Jaggery 2 cups
- All purpose flour 2 cups
- Khoya 1/2 cup
- Ghee1/2 cup
- Finely chopped dry fruits 1/2 cup
- Baking soda 1 teaspoon
- Ilaichi powder 1-2 tablespoons
- Soak the kesar in warm milk 1-2 cups
- Sliced almonds, cashews , pistachios 1/2 cup for garnishing
- Poppy seeds 1/4 cup for garnishing
Instruction-
- In a large mixing bowl add all the dry ingredients and mix it well.
- Next by adding ghee and milk knead the dough.
- let the dough rest for 1-2 hours .
- Make round and flat cookies and arrange them on baking tray.
- Add almond cashew and pistachio on top followed by some poppy seeds.
- Bake roats for 20-30 minutes or till golden brown at 350F/180C .
- Let them cool down.
- Serve with hot milk.
- You can store in air tight containers for later use.
