This Mutton Yakhni Pulao is fragrant with whole spices, the beautiful taste of Basmati and tender pieces of mutton. This is pure, elegant cooking in terms of flavors and what’s more important is  – it’s pretty quick to put together, which makes it perfect for weekdays as well!

Yakhani-

Yakhni simply refers to soup or broth or in the case of this mutton yakhni pulao – stock made from pressure cooking mutton or lamb with aromatics and whole spices. Pressure cooking releases all the flavors FAST, cooks the mutton about 70% of the way and creates the most flavorful stock. This stock becomes the base of this yakhni pulao.

ingredients

  • Basmati rice 2 cups
  • Boiled mutton 500 grams
  • Mutton stock 2cups
  • ginger garlic cilantor paste 1 cup
  • garam masala powder 2tpn
  • plain yogurt 1/2 cup
  • green chilies 4
  • oil and ghee 50-50
  • salt to taste

Process-

  1. Soak the basmati rice for 20 minutes drain it and set aside.
  2. Heat the pressure cooker add oil and ghee .
  3. Then add sliced onion saute till onion becomes soft .
  4. Then add ginger garlic and cilantro paste saute for few minutes.
  5. Add garam masala, green chili ,salt to taste saute for few seconds.
  6. Then add meat pieces and meat stock .
  7. Mix it well add meat stock give it a mix and bring it to boil.
  8. Once the mix start boiling add rice give it a mix.
  9. Close the lid of pressure cooker.
  10. Cook on high heat till first whistle.
  11. Then on low flame take one whistle.
  12. Turn off the gas after 2nd whistle.
  13. Let it cool down.
  14. Once the pressure cooker is completely cool down open it give it a mix.
  15. Serve hot with raita, dalcha.
