Vada Pav Recipe

Introduction:

Vada pav is famous fast food dish of Maharashtra, this dish can be made by deep frying flattened potato patty coated with gram flour/besan batter. and served  with dry coconut chutney and sliced pav. Vada pav can be eaten as breakfast or as evening snack with hot cup of coffee or tea.
Ingredients for dry coconut chutney

  • Dry coconut (grated and roasted) 2 cups
  • Garlic 4 to 6
  • Red chili powder 2 teaspoon
  • Salt to taste

Ingredients for potato stuffing:

  • Potato (boiled,peeled and smashed) 4 medium sized
  • Green chili and garlic paste 2 tablespoon
  • Turmeric powder 1 teaspoon
  • Lemon juice 2 teaspoon
  • Coriander leaves ( finely chopped) 1 cup
  • Salt to taste

Ingredients for vada batter:

  • Garam flour/besan 2 cups
  • Soda bicarbonate 1/2 teaspoon
  • Red chili powder 1 teaspoon
  • Water as per required
  • Salt to taste

 

Procedure for making coconut chutney:

  1. Add dry grated roasted coconut to grinder.
  2. Followed by garlic cloves ,red chili powder and salt to taste.
  3. Grind until fine powder.
  4. Coconut chutney is ready set aside.

Procedure for making potato vada:

  1. Heat oil in pan add green chili and garlic paste ,turmeric powder,salt to taste and saute.
  2. Add smashed potatoes and mix well.
  3. Transfer it to mixing bowl.
  4. Then add lemon juice,followed by coriander leaves mix well.
  5. Make flattened balls with potato stuffing , and set aside.
  6. In a large mixing bowl add garam flour/besan.
  7. Add Soda bicarbonate,red chili powder,salt to taste and mix well.
  8. Now add water and mix well to make batter.(batter should not be too thick or thin, its of medium consistency, if batter is thin add 2 tablespoon of garam flour ,if batter is too thick add some water to adjust the consistency).
  9. Set aside.
  10. Heat oil in a frying pan.
  11. Dip and coat the flattened potato balls in a batter, and gently  drop them in to medium hot oil .
  12. Fry till golden brown on both the sides.
  13. Transfer to absorbent paper.

Assembling vada pav:

  1. Slice the pav  without breaking into  two parts and keep aside.
  2. Spread dry coconut chutney in sliced pav.
  3. Place hot potato vada sandwiched in to sliced pav.
  4. Serve vada pav immediately with some fried green chilies.
  5. Enjoy as evening snack with cup of coffee or tea.
