Malpua

Introduction:

Malpua is a pancake served as a dessert or a snack, popular in India.The batter for malpua in some areas is prepared by crushing ripe bananas or (in Bangladesh) coconut, adding flour, and water or milk. The mixture is sometimes delicately seasoned with cardamoms. It is deep fried in oil, and served hot. In Odisha the Malpua fritters are dipped in syrup after they are fried. The Bihari version of this dish has sugar added to the batter prior to frying.

Malpua in northern India, particularly in Uttar pradesh, Bihar and Rajasthan, don’t contain fruit. There are several variations, using some or all of the following ingredients: maida (refined flour), semolina, milk, and yogurt. The batter is left to stand for a few hours before being spooned into a Kadai of hot oil to form a bubbling pancake which should be crisp around the edges. The pancakes are then immersed in a thick sugar syrup. Malpua is a popular sweet to make on the Hindu religious occasion of Holi.

Malpua is a famous dish during the Muslim holy month of Ramadan. Muslim families across India, as well as Pakistan prepare malpuas for iftar (meal to break the fast). This malpua includes maida, ,  khoya/ mawa (milk solids), /condensed milk and is deep fried to take the shape of a pancake. In some recipes, malpuas are dipped in sugar syrup called sira before serving.
Ingredients For Malpua Batter:

  • All purpose flour 1 cup
  • Cardamom (Ilaichi) powder 1/4 teaspoon
  • Fennel seed (saunf) coarsely crushed 1/2 teaspoon
  • Condensed milk 4 tablespoon
  • Milk 1 cup
  • Cashew nuts sliced  5 to 6 for garnishing
  • Pistachio sliced 8 to 10 for garnishing
  • Kesar few strands for garnishing
  • Ghee for frying

Ingredients For Sugar Syrup (chashni):

  • Granulated sugar 2 cups
  • Water 1 cup
  • Kesar few strands

Procedure :

  1. In a large bowl add all purpose flour,cardamom powder,saunf, mix well.
  2. Now add condensed milk mix well.
  3. Then add milk  and mix well ,and make thin batter.
  4. Set aside for 4 to 5 hours .
  5. In mean time make sugar syrup.
  6. Heat pan add granulated sugar ,water and few strands of kesar, and bring it to boil.
  7. Once it starts boiling lower the heat little bit and allow to boil for 8 to 10 minutes,and set aside.
  8. Heat the ghee in an frying pan on medium heat.
  9. Pour the batter with serving spoon and fry till golden brown.
  10. Flip malpuas and fry till golden brown on the other side too.
  11. Take out from the oil ,and allow to drain out  excess  of ghee.
  12. Now add these fried malpuas to hot sugar syrup and allow to soak for about 30 to 35 minutes.
  13. Garnish with sliced cashew nuts, pistachio and kesar.
  14. Serve immediately.
