Quinoa pulao,Paneer carrot cutlets and Cabbage salad:


Today i am posting one more healthy lunch box with quinoa vegetable pulao, paneer carrot cutlets,and cabbage and roasted vegetable salad.

Quinoa Pulao: 

Quinoa is not a real cereal, or grain, as it is not a member of the grass family. As a quinoa is closely related to species such as beet spinach, and amaranth.

Quinoa is a complete protein and it contains heart-healthy fats, a good amount of fiber and folic acid. It’s a great source of minerals too. Along with Quinoa, I have used different veggies like carrots, bell pepper,green peas and corn which are great source of fiber and vitamins.Whenever we think of making any healthy dish ,the quinoa is the nice option to make healthy dish with easily available ingredients.


  • Quinoa 1 cup
  • Onion (thinly sliced) 1/2 cup
  • Cumin seeds 1 teaspoon
  • Carrot (sliced ) 1/2 cup
  • Green capsicum (sliced) 1/2 cup
  • Red Capsicum (sliced) 1/2 cup
  • Green peas 1/2 cup
  • Corns 1/2 cup
  • Tomato (finely chopped) 1/2 cup
  • Ginger garlic paste 2 teaspoon
  • Garam masala powder 1 teaspoon
  • Red chili powder 1 teaspoon/ to taste
  • Turmeric powder 1/2 teaspoon
  • Olive oil 2 table spoon
  • Lemon Juice 1 teaspoon
  • Coriander leaves for garnishing
  • Salt to taste.


  1. Heat the oil in a pan add cumin seeds allow it to crackle, then add sliced onion and saute for few minutes.
  2. Then add ginger garlic paste ,red chili powder, garam masala powder, and salt to taste mix well.
  3. Now add all the vegetables and give it a mix and cook covered for 3 minutes.
  4. Add washed quinoa mix well and cook for few minutes, then add 2 cups of water mix well, and cook covered until done.
  5. Open the lid, fluff them up with fork, add lemon juice and cilantro.
  6.  Enjoy hot quinoa with raita and some roasted papad.

Paneer And Carrot Cutlets:


  • Paneer (grated) 1 1/2 cup
  • Carrot ( grated) 1/3 cup
  • Onion (finely chopped) 1/2 cup
  • Green chili ( finely chopped) 4
  • Red chili powder 1/2 teaspoon
  • Garam masala powder 1 teaspoon
  • Turmeric powder 1/2 teaspoon
  • Salt to taste
  • Corn starch 2 tablespoon
  • Coriander leaves 1 cup
  • Olive oil for shallow fry


In a mixing bowl add grated paneer.
                                             Add grated carrots.

                                              Add chopped green chilies.
                                 Add finely chopped onion.
                                 Add red chili powder, garam masala powder, turmeric                                                                                              powder and salt to  taste.

                                  Mix well.

                                   Add corn starch.
                                  Add  chopped coriander leaves.

                                           Mix well .

                                      Make round cutlets and set aside.
                                  Shallow fry with olive oil till golden brown.
                               Flip and roast on the other side till golden brown and serve  hot with sauce or green                                    chutney.

Cabbage And Roasted Vegetables Salad:


  • Cabbage (thinly sliced ) 1 1/2 cup
  • Carrot (grated ) 2 tablespoon
  • Green Capsicum 1/4th cup
  • Carrot (Thinly sliced) 1/4th cup
  • Corns 1/4th cup
  • Orange Capsicum
  • Olive oil 2 tablespoon
  • Onion Vinegarette dressing 1 teaspoon
  • Black pepper powder 1/2 teaspoon
  • Coriander leaves 1/4 cup
  • Salt to taste


In a mixing bowl add all vegetables (green capsicum,orange capsicum,green peas, and carrots) add salt pepper  olive oil (1 teaspoon) and mix well set aside for 10 minutes.

Toss all the seasoned vegetables on high flame for five minutes ans set aside.

In another bowl/plate add finely chopped cabbage and grated carrot and coriander leaves mix well .
Add roasted vegetables and give it a mix.
                              Add onion vinegarette dressing give it a final mix and serve  immediately.
