Ingredients:

  • Chicken 1 kg
  • Onion sliced 2 medium sized
  • Tomato chopped 1 large
  • Water 4 cups
  • Ginger 1″ pieces (crushed)
  • Turmeric powder a pinch
  • Coriander seeds  1 tablespoon
  • Cinnamon  1 stick
  • Cloves 4
  • Black peppercorn  10
  • Salt to taste.

Procedure:

  1. In a large pan add chicken pieces along with onion tomatoes,salt and water.
  2. Tie the ginger and spices in muslin cloth and add to the pan.
  3. Bring the mixture to boil , lower heat and cook covered for about 1 hour.
  4. Squeeze the muslin cloth to extract the flavors and strain the stock.
  5. remove the bones from meat and set aside.
  6. Refrigerate stock when cool and skim off any excess of fat ,if desired.
  7. Add 1 sauteed onion ,1 tomato,cooked meat,and some pasta or noodles for nutritious soup.
